It’s not hard to find great food, wine, service and ambience in Vancouver restaurants. Putting them all together under one roof may require a longer search. You walk into an amazing room, but the staff is less than attentive. Or the food disappoints, with no effort put into the beverage menu at all. You can take the guesswork out of the equation with my list of select dining restaurants. These are real reviews. I have dined at all of these establishments (often many times) and a great many more that didn’t make the list. I am looking for culinary creations that are pure, original and delicious, paired with a balanced, captivating wine and beverage list. You can’t have one without the other. Try one of these restaurants, and if you have a positive experience you should likely try them all. They hit the mark, in every way. We begin in Vancouver, but you will soon see lists from many of the great food cities of the world, again, all visited by me personally. Let the adventure begin.

MEET MARK TAYLOR, Curator

Earlier this year, during my travels to France, I visited Champagne de Venoge in their new home on Avenue de Champagne in Epernay. During my visit I had the pleasure of being the first person to experience their new Champagne Ice Cream, made by a Michelin 2-star pastry chef. The ice cream was heavenly, and the experience memorable. I have been fortunate to have eaten many amazing dishes and quaffed numerous of the great wines on this planet for the past 40 years, in the company of some excellent palates. Dining at restaurants in many cities is a core component of my travels. Experiences like that in Epernay abound, and this magazine is all about sharing those experiences.
